Smaller and darker cousin of Chickpea, it is rich in protein. Widely used in Middle Eastern and Indian dishes like falafels, hummus curries, salads, soups, and stews.

To Cook: Soak the Kala Chana for 3-4 hours. Rinse in cold water and then bring to the boil. Simmer for 20-30 minutes until tender. Do not eat raw.
