Laziza Paya Masala with Garlic and Ginger 100 g (Spicy Mix)
INGREDIENTS: Red Chilli, Coriander, Salt, Turmeric, Roasted Cumin Powder, Black Pepper, Dried Garlic 3 %, Dried Ginger 3 %, Clove, Cardamom, Cinnamon, Mace, Star Anise, Bay leaves.
RECIPE: Paya (Hooves in Spicy Curry)
- Hooves/Payas…………………….Goat 6–8 or Cow–1, chopped and washed in hot water.
- Onion (large)………………………1 finely sliced (125 g)
- Yoghurt (whipped)……………….1 cup (200 g)
- Ghee / Cooking Oil………………1 cup (150 g)
- LAZIZA PAYA MASALA……….one bag only.
EASY STEPS
- In about 8 glasses of boiling water put hooves, half quantity of sliced onion and Laziza Paya Masala (one bag). Cook on low flame until the hooves are tender (about 4–6 hours).
- Fry remaining quantity of sliced onion in hot ghee/oil until golden. Add yoghurt and fry for further few minutes while stirring then stir into the paya curry.
- Cover and cook on low flame for 20–30 minutes.
Serve with chopped green coriander, green chillies, ginger shreds and Laziza Garam Masala Powder.
Fry Paya:
- Follow step No. 1 of above recipe however when payas are tender about 3 cups of curry should remain.
- Take three additional sliced onions (150 g) and fry in hot ghee/oil until golden. Now put in cooked paya curry. Stir for a while and cook on low/medium flame until ghee/oil separates.
Note: Do not use yoghurt in fry paya.
