MDH Baingan Bhartaa Masala 100 g
Spices blend for roasted Aubergine
INGREDIENTS: Coriander, Dehydrated Unripe Mango, Salt White, Chilli Red, Cumin, Musk Melon, Pomegranate Seeds, Dried Ginger, Salt Black, Black Pepper, Fenugreek Leaves, Cinnamon, Mint Leaves, Cardamom Amomum, Cloves, Nutmeg, Caraway Mace Cardamom Green

RECIPE: Baingan Bhartaa Masala
- Roast a large (approx. 400 g) aubergine on low fire on all sides till the skin turns black
- Remove from fire and peel off the skin
- Wash and chop into large chunks
- Heat 50 g cooking oil in a flat pan and fry 15 g chopped ginger and garlic till light brown
- Add 100 g onions and fry till golden brown
- Add 100 g chopped tomatoes till soft
- Add aubergine pieces and half cup of peas
- Sprinkle 15 g Baingan Bhartaa Masala and salt to taste
- Mix well
- Add little water if required
- Stir and fry till it turns light brown
- Dress with chopped cilantro
- Serve with roti or pita
